Also known as Purple Leaf Fennel, Bronze Fennel is an attractive herb boasting delicate, feathery, divided foliage that emerges a striking bronze-purple shade before maturing to dark green. In summer, tall stems bear flat umbels of tiny yellow flowers that prove irresistible to bees, butterflies, and other pollinators.
All parts of the plant are edible and add flavour to stocks, soups, salads, pasta, pizza, and rice dishes. Bronze Fennel complements fish, lamb, and poultry dishes particularly well. The seeds have a subtle aniseed-like flavour and are perfect for infusing bread, cakes, and apple pie with flavour. Yellow flowers can be used as a garnish or to inject a pop of colour to salads.
Bronze Fennel is a hardy perennial herb that is low maintenance and easy to care for. It thrives in a sunny, sheltered spot and prefers moist but well-draining soil. Bronze Fennel plants are renowned for spreading far and wide, however pruning spent blooms after flowering helps regulate self-seeding.
Sow Bronze Fennel seeds inside or directly outdoors from April to May. Plant out from mid-May, when all risk of frost has passed and allow 30cm between plants. Harvest from June to August.
