Sage 'Nazareth' is a popular perennial herb, famously prized for its highly aromatic foliage and classic culinary uses. The primary part used for its culinary value is its grey-green, textured leaves, which provide a robust, pungent, and earthy flavour that is essential for seasoning. It is a key ingredient in stuffings and for flavouring rich meats like pork and poultry. The attractive, small purplish-blue flowers that appear in spikes are also edible and make a beautiful, fragrant garnish.
When it comes to planting and maintenance, this is an easy-to-grow, shrubby perennial, but it has very specific, non-negotiable requirements. It is extremely fussy about its light conditions and absolutely must have a location in full, direct sun to develop its best flavour. The main requirement for it to grow well is providing it with soil that is exceptionally well-drained, as it strongly dislikes "wet feet" and is very drought-tolerant once established. As an added benefit to the garden, its attractive flowers are known to be a major favourite of bees.

Top Tip
The leaves of Sage 'Nazareth' are slightly thicker than common sage, making them the best variety for dipping in batter and deep-frying as a crispy garnish. This texture also means they hold up exceptionally well in long-cooked winter stews without dissolving into mush.
How to Water
Sage 'Nazareth' is extremely drought-tolerant and should be watered very sparingly once established. Excess moisture around the roots will kill the plant, so ensure the soil is almost bone dry before watering.
How to Plant
Plant the drought-tolerant Sage 'Nazareth' in full sun with very gritty, free-draining soil to mimic its native Mediterranean habitat. Avoid wet ground and prune lightly after flowering to maintain a compact, bushy shape.
