Common Sage is a fundamental culinary herb cultivated primarily for the strong, savoury aroma found in its textured, grey-green leaves. This potent flavour, which is warm, slightly peppery, and pine-like, is released effectively during cooking and pairs exceptionally well with rich, fatty foods. It is traditionally used as the key ingredient in onion stuffing, breakfast sausages, and saltimbocca, as its oils are powerful enough to cut through and complement heavier meats like pork and duck.
This plant is typically grown as a hardy evergreen sub-shrub that forms a woody, bushy mound, providing reliable foliage throughout the year. It is generally tough and frost-tolerant, though older plants can become straggly and woody if left unpruned. For the best results and densest growth, plant it in a location with full sun. It is highly drought-tolerant once established and thrives in poor, free-draining soil, but will quickly succumb to root rot if planted in heavy, waterlogged ground.

Top Tip
Common Sage benefits greatly from an annual "haircut" to stop it becoming leggy and woody. Prune it back firmly in early spring just as new growth appears, but take care not to cut into the old, dead wood, as sage rarely regrows from these parts.

Water young Common Sage plants regularly to help them establish their root systems. Once mature, the plant is well-adapted to dry conditions; allow the soil to dry out between waterings and avoid wetting the foliage excessively to prevent mildew.
How to Plant
Plant Common Sage in a warm, sunny position with excellent drainage. It struggles in wet, heavy clay, so if your soil is dense, dig in plenty of grit or plant it in a raised bed or container to ensure the roots stay healthy and dry.
