Wild Garlic, also known as Ramsons, is a popular perennial herb, famously prized for its culinary versatility. The primary parts used for their culinary value are its broad, flat leaves, which provide a mild and savoury flavour that is often described as a perfect mix between chives and sweet, cooked garlic. However, its edibility doesn't stop there; the attractive, star-shaped white flowers are also edible and make a beautiful, pungent garnish, and even the small bulbs can be used.
When it comes to planting and maintenance, this is an easy-to-grow, clump-forming perennial that is very adaptable, though it can spread vigorously to form a large colony. It is quite fussy about its light conditions and will thrive in locations with partial or full shade, preferring a woodland-like setting. The main requirement for it to grow well is providing it with soil that is kept consistently moist and is rich in organic matter. As an added benefit to the garden, its attractive white flowers are known to be very popular with pollinators.

Top Tip
Always crush a leaf to check for the garlic smell before harvesting Wild Garlic, as it looks dangerously similar to the poisonous Lily of the Valley which often grows in the same woodlands. The flowers are actually stronger tasting than the leaves, so use them sparingly as a garnish to avoid overpowering your dish.
How to Water
Wild Garlic grows naturally in damp woodlands, so keep the soil consistently moist but not waterlogged. Water well during spring when the leaves are actively growing to support the bulbs.
