It is traditionally used as a premier kitchen herb for authentic Italian cuisine, particularly for seasoning roast lamb, focaccia bread, and olive oils, where its strong aromatic oils stand up perfectly to high heat.
This plant is typically grown as a tall, upright evergreen shrub that forms a stately column, making it an excellent choice for informal hedging or adding vertical structure to the garden. It is generally hardy but requires a sheltered spot away from freezing winds to protect its foliage. For the best results and a profusion of its signature deep blue flowers, plant it in a location with full sun. Rosemary 'Tuscan Blue' is one of the best varieties for shaping. Its fast, upright growth makes it ideal for training into topiary standards (lollipops) or clipping into a neat, aromatic hedge. Trim it after flowering to maintain the shape, but avoid cutting into old wood.
