Product description

Thyme 'Foxley' is a popular perennial herb, famously prized for its highly ornamental, cream-splashed, variegated leaves. The primary part used for its culinary value is its aromatic foliage, which provides a classic, robust thyme flavour, making it a great all-purpose choice for seasoning. However, its edibility doesn't stop there; the attractive, small pinkish-purple flowers that appear in spikes are also edible and make a lovely, fragrant garnish.

When it comes to planting and maintenance, this is an easy-to-grow, low, mounding evergreen perennial, but it has very specific, non-negotiable requirements. It is extremely fussy about its light conditions and absolutely must have a location in full, direct sun to maintain its bright variegation and develop good flavour. The main requirement for it to grow well is providing it with soil that is exceptionally well-drained, as it strongly dislikes "wet feet" and is very drought-tolerant once established. As an added benefit to the garden, its attractive flowers are known to be a major favourite of bees.

Instructions

Top Tip

If Thyme 'Foxley' starts producing all-green shoots, it is often a sign it isn't getting enough light, so consider moving it to a brighter spot. The creamy variegation makes it an excellent choice for lighting up the edge of a path that gets evening light.

How to Water

Water Thyme 'Foxley' moderately, allowing the pot or ground to dry out between soakings. Avoid splashing water on the variegated leaves too often, and ensure the roots never sit in damp soil.

How to Plant

Plant Thyme 'Foxley' in full sun to maintain the variegated leaf colour, ensuring the soil is gritty and drains rapidly. Trim back lightly after flowering to prevent the mound from becoming woody and leggy.
