Mint 'Swiss' is considered the gold standard for tea, but bruising the leaves with a wooden spoon before steeping extracts more flavour than simply pouring water over them. Freezing individual leaves inside ice cubes creates a beautiful and functional garnish that slowly releases flavour into cold drinks.
