English Sage is a classic culinary herb cultivated primarily for the strong, earthy flavour found in its broad, silvery-green leaves. This potent taste, which is savoury with hints of pine and citrus, is released when the leaves are chopped or cooked, retaining its strength even during long cooking processes. It is traditionally used as the essential seasoning for stuffing, sausages, and rich fatty meats like pork and goose, as well as being a staple in winter soups and bean dishes.
This plant is typically grown as a hardy, evergreen sub-shrub that forms a woody, bushy mound, providing year-round structure and foliage in the garden. It is generally tough and frost-tolerant, though it can become leggy and woody over time if not managed. For the best results and densest growth, plant it in a location with full sun. It is highly drought-tolerant once established and demands free-draining soil, as it will struggle and rot if left in damp, waterlogged ground.

Top Tip
English Sage can become woody and unproductive after 4–5 years. To extend its life and keep it looking tidy, replace the plants every few years or take softwood cuttings in summer to grow vigorous new replacements.
How to Water
Water young English Sage plants regularly until they are fully established. Once mature, the plant is Mediterranean in origin and drought-tolerant; only water during extended dry periods, allowing the soil to dry out between waterings to prevent root rot.
How to Plant
Plant English Sage in a warm, sunny spot with excellent drainage. It thrives in average to poor soil and dislikes heavy clay. If planting in a pot, use a loam-based compost mixed with grit to ensure water drains away freely.
