Winter Savory is a potent culinary herb cultivated almost exclusively for the intense, peppery bite found in its stiff, narrow leaves. This strong, spicy flavour, which is sharper and more enduring than that of its annual cousin Summer Savory, is released when the leaves are chopped or cooked. It is traditionally used as a classic seasoning for beans, pulses, and fatty meats, as it is believed to aid digestion and cut through heavy, rich flavours.
This plant is typically grown as a hardy, semi-evergreen dwarf shrub that forms a neat, woody mound. It is robust and cold-tolerant, maintaining its foliage year-round in milder climates. For the best results and strongest essential oils, plant it in a location with full sun. It is drought-tolerant and must have poor, well-drained soil, as it thrives in dry conditions and will suffer if the roots are kept consistently moist or waterlogged.

Garden Plant Size Guide

Plants in larger pots can be multiple years older than their smaller counterparts with more mature root systems and foliage. This makes them able to thrive as a full size plant in your garden quicker than smaller alternatives.
The most common size of pot that garden plants come in are 9cm/1L/3L/5L this is in reference to the diameter at the top of the pot.
9cm potted plants still remain the most popular cost effective option though, they just may take a little patience to allow them to grow into full maturity once planted in your garden.

Instructions
Top Tip
Winter Savory is often called the "Bean Herb." Add a sprig to the boiling water when cooking lentils or beans to improve the flavour and help reduce flatulence. It also makes an excellent low edging plant for a kitchen garden bed.
How to Water
Water young plants regularly to establish the root system. Once mature, Winter Savory rarely needs watering and prefers dry, rocky soil conditions.
How to Plant
Plant Winter Savory in a sunny, well-drained spot. Unlike many other herbs, it does not require rich soil and often performs better in poorer ground where it won't become leggy.
