Fennel Bronze is a majestic architectural herb cultivated largely for its stunning, smoky-bronze foliage, which adds height and drama to any border. While it produces aromatic seeds and feathery leaves that carry a distinct, sweet aniseed flavour perfect for garnishing salads or pairing with fish, it is often treated as an ornamental plant. It is traditionally used to add texture and colour contrast in flower beds, and its flat-topped yellow flower heads are a magnet for hoverflies and solitary bees.

This plant is typically grown as a hardy perennial that dies back to the ground in winter before sending up tall, vigorous plumes in spring. It creates a soft, airy screen in the garden but can self-seed freely if the flower heads are left to mature. For the best results and deepest leaf colour, plant it in a location with full sun. It is drought-tolerant once established and thrives in light, well-drained soil, though it will rot in heavy, waterlogged ground.

Top Tip

Fennel Bronze is a prolific self-seeder and will pop up all over your garden if left unchecked. To prevent this, deadhead the yellow flowers as soon as they fade—unless you want to harvest the fennel seeds for baking or leave them as a winter food source for birds.

How to Water

Water young plants regularly to help the deep taproot establish itself. Once mature, Fennel Bronze is remarkably drought-tolerant and rarely needs watering, except in extreme heat. Avoid overwatering, as the roots can easily rot in soggy soil.

How to Plant

Plant Fennel Bronze in a sunny spot with well-drained soil, keeping in mind that it grows very tall (up to 1.5m) and looks best at the back of a border. Do not disturb the roots once planted, as it has a long taproot that resents being moved.
